Before we leave Iran for another region of Middle Eastern cuisine, I wanted to share one fond memory from our time there. It was visiting the many German and Iranian bakeries that lined the streets of the city. There were many sweets, such as "Birds Nest", phyllo cups stuffed with chopped pistachios drizzled with honey. A wonderful Baklava was also created with almonds and honey. Rosewater is a popular Middle East dessert flavoring. Sadaf brand is available at Middle Eastern Groceries. You can also order it online.
I loved a sugar shortbread cookie from a bakery close to our home. These cookies were made with rosewater and pistachio nuts. They were not iced but that would be something I would prefer. Today I decided to try my hand at making a basic refrigerator sugar cookie recipe. I used alternate flour ingredients and artificial sweetness. It was very good. These look very similar to the ones I used to remember from that bakery. These cookies are great! You can refrigerate them, cut off some and bake as many as you need. If the cookies are cut 1/4 inch thick, they will yield approximately 4 dozen cookies. This recipe will not work unless the OWL grains are rung.
This is my first attempt to use the low carb friend KevinPa's bake mix. KevinPa, a former member of Low Carb Friends forums, passed away. His baking skills will be greatly missed by those who loved them. You can make the various flour substitutes and bake mixes in this recipe with different results. If you don't have Kevin's mixture, you could use Jennifer's and achieve the same result.
You can freeze this roll of batter. You will need to let the batter cool before you can slice it.
Variation: You can substitute chopped almonds for the pistachios to make a shortbread cookie.
INGREDIENTS:
2 sticks butter, unsalted and softened
2 eggs small or 1 large
1/4 tsp. 1/4 tsp. salt
2 oz. pistachios, coarsely chopped
1 T. + 1 tsp. Rosewater (I use Sadaf brand)
1/2 c. Granular Splenda
1/4 c.
1 c. KevinPa's Baker Mix, Peggy's Version
1/2 cup almond flour
1/2 c. Jennifer Eloff’s Splendid LowCarb Baker Mix
2 T. Carbquik Mix Bake Mix
1 T. oat fibre
DIRECTIONS Cream the butter in a large bowl. Add the egg and beat it together. Add the nuts, salt, sweeteners, and rosewater. Mix the ingredients in the baking mixes. Combine well. Form into a log using waxed paper. The log should be rolled up tightly and chilled for approximately 2 hours. Pre-heat oven to 350o Cut into 1/4" slices. Place on a parchment or silicone lined baking sheet. These won't spread too much during cooking. Bake for 10-12 minutes, turning once halfway through. Let cool. Frost with 1/2 teaspoon of your favorite cream cheese frosting. Rosewater can be added. Sprinkle with finely chopped pistachios if desired.

1 1/2 T. almond meal

1/2 tsp. 1/2 tsp. xanthan gum (Kevin used not/Sugar).

Dehydration can result as your cells need to return to homeostasis. The dehydration also results in an electrolyte imbalance due to the lack of essential minerals like sodium and potassium.
These issues are not the only ones. It is common for people who "cheat" on keto to experience digestive discomfort like constipation and diarrhea as a result of their high-carb diet. Although these symptoms are temporary, they can be very uncomfortable and disruptive. Additionally, intense cravings resulting from cheat meals may lead people into dangerous cycles of feeling deprived, followed by binging on high-carb foods; thus undoing all the hard work they put in while following the keto diet plan.
Remember that even if you indulge in a few cheat meals or snacks, your progress on the Keto diet will not be halted for several months or longer. But there will still be consequences for going beyond your meal plan for long periods.
Can you eat any fruit on keto?
Are you curious about whether fruit can be eaten on a keto diet. You can, but with caution.
To stay in ketosis and burn fat, the idea is to keep carbs to a minimum. A healthy and balanced keto diet can include some fruits.
Low-carb fruits can be included in a keto diet, but they need to be consumed sparingly and with moderation. There are many different fruits with different carbohydrate content. For example, avocados have very little carbs while bananas have much more.
Your body uses sugar in fruits to produce energy. If you are trying to reach nutritional ketosis, an excessive amount of sugar could cause blood sugar spikes. It is important to limit how many sugary foods you consume.

Before you start to prepare for the ketogenic diet, it is important to do your research. You'll want to understand what foods are recommended and how many carbs you can have daily. It's also important to learn which foods provide the best balance of macronutrients.
Once you have the basic information, it is time to start creating meals that suit your new lifestyle. Avoiding processed sugars and eating whole, unprocessed food will help your body acclimate to this new approach faster. A few easy tweaks such as including more healthy fats or proteins in every meal can dramatically improve energy levels, focus, and help with cravings.
Next is learning how to control portion size and time your meals while on the ketogenic diet. Your body will enter ketosis when it begins burning fat for energy. This can either be accomplished by tracking macros or consulting a nutritionalist who may be able to offer one-on-1 advice.
